Equipment

Instructions
Cook the quinoa
Bring the water and quinoa to a boil. Reduce the heat to medium-low, cover, and simmer for 10 to 15 minutes, until the quinoa is tender and the water is absorbed.
Mix the dressing
Whisk the olive oil, lime juice, cumin, red pepper flakes, and salt in a small bowl.
Prepare the vegetables
Halve the cherry tomatoes, slice the spring onions, chop the cilantro, and rinse the black beans.
Combine the salad
Add the cooked quinoa, tomatoes, black beans, spring onions, and cilantro to a large bowl. Pour over the dressing and mix to coat. Season with the black pepper.
